Pomegranates are a common food that is eaten in the Middle East and North Africa that are just as popular now as they were in with early Paleo cave people. They are tart and sweet at the same time but bursting with antioxidants. Foods with really deep colors such as berries or pomegranates are very high in Vitamin C which helps with detoxification. Coconut milk is a dairy-free alternative used in this Keto Pom and Cream Jello recipe that is full of medium chain triglycerides that are known for reducing belly fat and boosting energy.

Keto Pom and Cream Jello

This delicious Keto pom and cream jello is nutrition packed with vitamin C and healthy fats. And it is perfect dessert for paleo, low carb, sugar, grain and gluten free dieter

Ingredients

  • 1 cup water
  • 2 tablespoon grass fed gelatin
  • 1 can coconut milk about 2 cups
  • 3/4 cup pomegranate seeds
  • 1 teaspoon rose water orange zest may work
  • 1 teaspoon stevia powder extract

Instructions

  1. Mix the water with the gelatin in a bowl until smooth.
  2. Heat up the coconut milk over medium heat in a saucepan.
  3. Stir the gelatin mixture into the pan.
  4. Add the rose water and sweetener and then stir in the pomegranates seeds for a few seconds
  5. Pour the gelatin mixture into a greased jello mold or silicone mold.
  6. Refrigerate the gelatin for two hours.
  7. Serve and enjoy Pom and Cream Jello.

Recipe Notes

Paleo Version: Use 2 tablespoon raw honey in place of stevia powder extract

    I made this last weekend and I love it! I had to find the rosewater but it was an easy find at the middle eastern grocery store down the street from my home.
    I also realized that my dry flaky ears have disappeared. They were really sore over the weekend but this morning the dryness was gone and my ears felt normal for the first time in several years. I have a feeling the gelatin had something to do with my dry skin issues going away. I am looking forward now to having several varies in the fridge ready to eat.
