Low Carb and Paleo Loaded Cauliflower Mash Recipe

Doesn’t this cauliflower mash recipe look amazing? I am so excited about Ditch the Wheat Cookbook by my long time friend Carol Lovett! We go way back!  You can see her success story here.  She even lived at my house for a while during the shooting of her new beautiful cookbook, so I take all the credit. Just kidding….

This cookbook offers 120 paleo recipes for a gluten free lifestyle, because eliminating gluten doesn’t have to mean giving up delicious food. There are so many tasty options like the chicken enchilada soup, buffalo chicken fingers and also loaded mashed cauliflower with bacon & green onions which I am sharing with you at the bottom of this post!

Carol has first hand experience in healing a number of ailments with a grain free diet.  When her doctor told her to ditch the wheat, and she did – her body began to heal and stubborn headaches, bloat and digestive issues like IBS all but disappeared.   This is where Ditch the Wheat the blog was born.  Carol has been sharing free recipes on her blog for years and I am so excited I can finally have them all packaged up in a beautiful cookbook that I can easily grab to make dinner!  You can get your copy HERE. 

This is a great cookbook for beginners and seasoned paleo folks alike.  There are staples and more complex recipes but with Carol leading the way, making them is a breeze. She really brings grain free cooking and baking to the masses and simplifies the process making it much less intimidating.  I also love the culinary quotes sprinkled throughout, very motivating! The illustrations also are amazing and bring it to life. This cookbook will be in your heavy rotation for sure!

Loaded Mashed Cauliflower with Bacon & Green Onions

Yield: 4 servings Prep time: 10 minutes Cook time: 15 minutes
 
I am a huge fan of pureed cauliflower. I like it even more than the mashed potatoes it’s often meant to replace. With this recipe, I took plain pureed cauliflower and kicked it up a notch by pairing it with bacon and green onions. You’re going to love it!
 
Ingredients:
 
1 medium head cauliflower (about 1¾ pounds), cored and chopped into 1-inch pieces
½ medium onion, chopped
¼ cup (½ stick) unsalted butter or ghee 
1 teaspoon fine sea salt
4 slices bacon, cooked and finely chopped
4 green onions, finely chopped
 
Directions:
 
1. Place the cauliflower and onion in a 3-quart pot with enough water to cover and bring to a boil. Boil for 15 minutes, or until the cauliflower is tender. Drain the water from the pot.
 
2. Add the butter and salt to the cauliflower. Puree with a hand blender, or transfer the ingredients to a food processor and pulse until smooth.
 
3. Reserve some of the bacon and green onions for garnish and stir the rest into the cauliflower puree. Top with the reserved bacon and green onions and serve immediately.
 
Nutrition Info: Calories: 231 Protein: 8.9 g , Total Fat : 19.6 g, Total Carbs: 6.2 g,  Net Carbs: 3.9 g,  Fiber: 2.3 g  (nutrition facts based on 4 servings)

    Wow! That legitimately looks like a big ol’ bowl of mashed potatoes! I love the addition of the bacon and green onions! Is it too soon to be planning my Thanksgiving menu? 😉
