Ditch the Wheat’s Paleo Success Story and E-Book Preview

January 28, 2013 By Caitlin Weeks

Ditch the Wheat’s Paleo Success Story and E-Book Preview –

I recently had the privilege of interviewing my friend Carol from the Ditch the Wheat.com about her success with Paleo and her new E-cookbook. Carol’s story is featured in the great book The Paleo Miracle

Carol Lovett Before and After from The Paleo Miracle

Ditch the Wheat’s Paleo Success Story and E-Book Preview

From Carol:

What made you go Paleo in the first place?

I was seeing a specialist for vertigo problems and I was complaining about stomach pains and cramps.  I also put on about 30 pounds when I recently returned to university at the beginning of the recession.  My doctor suggested that I ditch the wheat.  My stomach pains went away.  I followed the Atkins diet for guidance.  A lot recipes on the Atkins diet use dairy.  When I ate all of this dairy my skin would break out so I gravitated towards paleo recipes since they were dairy free.  I guess my turning point was when I decided to try out raw honey.  I actually lost weight when I switched from sweeteners to raw honey.  That little turning point got me over my fear of carbs.  I got more and more into all natural foods.  People started referring to my blog as a paleo blog.  That’s when I started realizing, I was paleo.

How has going on the Paleo diet helped your health?

My vertigo issues, Meniere’s disease, have decreased to the point where I don’t take medication for it anymore.  I lost most of my weight on the Atkins diet but my muscles really started to show when I ate 100% paleo.  Now I have a toned stomach without doing a ton of sit ups.  I used to suffer from daily headaches and now I rarely get headaches and migraines.  I maintain my weight loss easily.

What challenges have you had with going Paleo?

I haven’t had any challenges.  Most people find it difficult to stick to the diet but I’ve found it extremely easy.  For the first time I don’t feel like I’m dieting.  If anything it’s been a relief to stop the yo-yo dieting cycle that I’ve been going on most of my adult life.

What lifestyle habits do you feel are important to follow on the Paleo diet?

Eat consistently within paleo rules. Realize that eating paleo doesn’t mean you have to rush out and buy everything organic and grass fed.  If you can afford that, that’s great, but I would suggest easing your budget towards it.  I’m not a fan of cheat days so I don’t promote that as a way of sticking to a lifestyle.  Instead I promote the idea of changing your favorite foods to paleo versions like the ones in my new e-book.

What made you want to write your great new e-book: Indulge: 70 Grain Free Desserts?

I wrote the book for people who were in the same situation as me.

This is what the dedication in the book says: This book is dedicated to anyone who has ever sat in a doctor’s office and heard the words, “ditch the wheat” uttered. I know what’s it’s like to have your body decide what to eat.  I mourned the loss of foods that were a regular part of my diet like, TV. dinners, cake, bread etc.  I created my book for people who felt the same and wanted to eat some cake again.

What is your favorite recipe in the book?

I have a few favorite recipes.  My favorite cake recipe is chocolate truffle cake.  I was experimenting with cocoa powder as flour and this was the result.  It is truly decadent. Favorite bar recipe is magic cookie bars.  One word, yummy.
I love the simplicity of the turtles recipe. I was playing around with ways to use medjool dates as caramel and made this.  My recipe taste testers loved it so I included it in the book.

Congratulations! Wow–I knew there was a connection to wheat and vertigo! I have had it randomly for years (sometimes with a cold, but sometimes for no reason–it was considered BPPV, not Meniere;s). The most recent time was after a long time without wheat (and then I had a taste of bread to be appropriately social at a Friday night dinner). Mistake! A few days later, I had random vertigo for a week. People think I’m crazy that I think there’s a connection–why not? Wheat is connected to migraines. They’re related. I haven’t had any wheat (or gluten) since October, not even a taste.

Anyway, congratulations for figuring it out, and taking care of yourself!
