This Keto Cranberry Orange Gelatin with walnuts is a delicious jello recipe that is made with healthy grass fed gelatin. It is perfect for the Paleo, gluten free, dairy free, low carb, ketogenic Gaps and SCD diet.

Grass Fed Gelatin

Gelatin used to be a big part of healthy traditional diets but people today don’t have a clue about what to do with it. All people know today about gelatin is Jello that is full of sugar, artificial colors, and genetically modified foods. Many people have heard about the healing powers of broth (learn how to make broth here) but they don’t know how to make it. Gelatin is basically dehydrated broth powder made up of bones, cartilage, collagen and minerals. It is a great source of amino acids which support a healthy moods and proper muscle synthesis. Ingredients

  • 2 cups organic cranberries
  • 2 cups water plus 1/4 cup
  • 2 tablespoon grass fed gelatin
  • 1/2 cup chopped walnuts
  • 1 teaspoon orange zest
  • 1 teaspoon orange blossom water optional
  • 1 teaspoon stevia powder extract

Instructions

  1. Blend the cranberries and water in a food processor then pour into a sauce pan over medium heat.
  2. Mix the gelatin with 1/4 cup water in small bowl.
  3. Add the gelatin mixture to the pan and stir for 5 minutes until the mixture is warm.
  4. Add the walnuts, sweetener and orange zest and orange blossom water to the mixture.
  5. Mix the cranberry sauce a few more times then pour into a silicone mold or greased glass dish. Let it sit in the refrigerator for 1-2 hours until set
  6. Slice and serve yummy cranberry orange gelatin with walnuts

For Paleo version: Use 2 tablespoon raw honey in place of stevia powder
