Grain Free Low Carb Turkey Noodle Soup –
Do you love chicken/turkey noodle soup because it reminds you of your mom or grandma on a chilly day. Maybe you ate it when you were sick as a child like I did. Unfortunately is was usually from a can but it still brings back warm memories! You may feel bummed out because regular noodles are off the table if you’re like me and have a gluten intolerance and or autoimmune disease. Well now you can have your noodles and slurp them too!
Are you looking for something to do with all those turkey leftovers? Pop them into this fast and easy soup and have those “noodles” dripping off your chin in no time! This soup will heal all that ails you! My husband does not even like spaghetti squash but he went wild for this grain free low carb turkey noodle soup recipe!
Grain Free Low Carb Turkey Noodle Soup –
Grain Free Low Carb Turkey Noodle Soup
Serves 4
Prep time: 5 minutes
Cook time: 30 minutes
Ingredients:
1 Tbsp grass fed butter/ghee or coconut oil
3 celery stalks, diced
2 carrots, sliced
Sea salt and pepper to taste
6 cups homemade turkey/chicken broth(my recipe here, don’t use store bought!!)
1/4 cup chopped parsley
3 cups shredded and cooked turkey or chicken (pastured and organic is best)
3 cups steamed or baked spaghetti squash (easy tutorial here)
Directions:
Melt the butter in a soup pot (this is mine) and add the mirepoix (carrots, celery and onions).
Add salt and pepper to the pot and cook for 5 minutes over medium heat.
When the onions are soft add the parsley, broth and meat to simmer for 20 minutes.
Add the spaghetti squash to the pot and cook for 10 more minutes.
Adjust seasonings to taste and top with more parsley if desired.
Top with a little more butter/ghee or olive oil if desired.

Your recipe doesn’t say when to put in the broth.
Yum! Just made this & it is delicious. Simple, but very tasty! I added a bay leaf when I added liquid & my chicken was previously cooked in the crockpot with a coating of turmeric & thyme, so a little bit of different flavor there.
