Keto Egg Nog Pudding Recipe
I got inspired to make this keto egg nog gelatin pudding for my Dad so he would have a low carb treat over the Christmas Holiday. He is trying to get healthy and lose weight by doing Paleo with a more low carb version. He has been more focused on gluten free in the past and it is not really working because it is too high in carbohydrate. He has quite a bit to lose and his insulin resistance is a big challenge. He was happy to have this paleo egg nog gelatin pudding at then end of dinner when everyone else was eating my Primal Carrot Cake. This paleo and keto egg nog pudding is perfect for people who are on a nutritional ketosis diet too.

Keto Egg Nog Pudding
This delicious, esay to make, Keto Egg Nog Pudding is perfect holiday treat for low carb, Ketogenic, egg free, sugar free, gluten free, grain free and dairy free dieters.
Ingredients
- 1 cup water
- 1 tablespoon grass fed gelatin rounded
- 1 13 oz can coconut milk about 2 cups
- 3/4 teaspoon stevia powder extract
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon gluten free vanilla extract
Instructions

Mix the water and gelatin together.

Pour the gelatin mixture into a saucepan with the the rest of the ingredients.

Heat the coconut mixture until it is hot then pour into pudding cups.

Refrigerate for one hour or until set.
