Quick Low Carb and Keto Chocolate Mug Cake

Keto Chocolate Mug Cake – one-minute-muffins_sq_2

This Keto Chocolate Mug Cake is a spin off of my friend DJ Foodies great recipe. I got a microwave for my downstairs rental and decided to borrow it for the day. Usually I don’t like to use the microwave but I was just feeling like experimenting. I just think if you use it a lot it may take some of the life out of your food making it less nourishing. But every once in a while it is okay. I wanted to eat this like a breakfast so I made his recipe a little bigger and added modifications for Paleo peeps.

Keto Chocolate Mug Cake

This delicious Keto Chocolate Mug Cake is great option for when you want a quick chocolate low carb muffin dessert for breakfast. It is perfect for low carb, grain, gluten and sugar free dieters.

Ingredients

  • 1 egg
  • 2 tablespoons ground golden flax seed
  • 2 tablespoon blanched almond flour
  • or sunflower meal
  • 1/2 teaspoon stevia extract
  • 2 tablespoons cocoa
  • 1/3 teaspoon baking soda
  • pinch of sea salt
  • 2 tablespoons melted coconut oil

Instructions

  1. Mix all the ingredients together in a bowl then move to two mugs or ramekins.
  2. Place in microwave for 1 minute.
  3. Serve and enjoy.

Recipe Notes

You can see my oven version here if you don't want to use a microwave.

For Paleo Version: Use 2 tablespoons coconut sugar in place of stevia
