Recently my Dad gave Paleo a try so I thought I would help him with the transition by making him some bread like items. He really loves his morning English Muffin so I thought this would be better than him eating gluten. I saw two bananas in the fridge that were going bad so I was inspired to make this grain free dairy free banana blueberry coffee cake. He did really well with his first week so I am really hoping he sticks with the lifestyle.

Cooking Time 30 minutes
Serves: 4-6
Grain Free Dairy Free Banana Blueberry Coffee Cake
Ingredients:
4 eggs (soy free here)
1/2 cup coconut oil, melted
3 tbsp raw honey
1/2 cup coconut flour, sifted
2 very ripe bananas
1/2 tsp baking soda
1/2 tsp sea salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1 cup blueberries
Directions:
Preheat the oven to 350.
Mix the dry ingredients.
Mix the wet ingredients.
Combine the two mixtures and stir well.
Next carefully fold in the blueberries with a spatula.
Pour the the dough into a greased round cake pan and bake for 30-35 minutes.
Note:
I used frozen blueberries in this recipe so that will work when blueberries are too expensive or out of season.
Always use organic ingredients whenever possible.
