Best Keto Cake Brownies

My experience with collagen is long standing and I have been using it in my coffee, smoothies and Keto dark chocolate cake brownies for years. One of the missing pieces in the American diet is nutrition gained from boiling bones that you often see in Asian cultures and ancestral diets. While most people are too busy collagen offers a shortcut for getting many of the same nutrients and it mixes in well into foods you are probably already eating and it is tasteless and odorless. Another great benefit is that it increases the protein of your meals which helps satiety to make it to the next meal. 

One reason I like Vital Proteins is that they are very transparent about sourcing healthy bones from grass fed animals. Bones from can concentrate heavy metals and pesticides so using grass fed animals is very important.

Best Keto Cake Brownies

Ingredients

  • 3 eggs
  • 1/2 cup canned coconut milk, full fat room temperature
  • 1/2 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1 cup coconut oil, melted
  • 1 1/4 cup blanched almond flour
  • 3/4 cup cacao powder
  • 1/4 teaspoon baking soda
  • 2 tablespoons Vital Proteins Collagen
  • 1/2 cup chopped walnuts
  • 3/4 cup Swerve, granulated

Instructions

  1. Preheat the oven to 350 degrees.

  2. Add the eggs, swerve (or coconut sugar for Paleo), coconut milk, vinegar, and vanilla to a bowl and blend with a hand mixer for two minutes.

  3. In another bowl place the sea salt, coconut oil, almond flour, cocoa, baking soda, Vital Proteins Collagen and whisk until well combined.

  4. Stir in the chopped walnuts.

  5. Pour into a greased square 8 by 8 inch baking dish.

  6. Bake for 35-40 minutes or when a knife inserted in the middle comes out clean.

  7. Remove the keto brownies from the oven, cool for 15 minutes before cutting and serving.

For a paleo friendly version use 3/4 cup granulated coconut sugar in place of Swerve.

    This recipe is sooo timely! I tried a different keto brownie recipe last night and it was the first utter failure in a long while. I am determined to redeem myself and I’m hoping this recipe will be the trick!
    Question: I Don’t see the collagen powder in the ingredients list. How much would you use?
