Meal 1: Frittata
Finding nutrient rich and satisfying meals that align with the diet can be a game changer. Frittata is a versatile and delightful option that not only caters to the carnivore lifestyle but does so with an explosion of flavor and simplicity. Packed with the goodness of eggs, heavy cream, and a generous touch of cheese, this Frittata offers a perfect balance of protein and fat essential for a thriving carnivore diet. So let’s start with frittata that sets the tone for a week full of nourishing and convenient carnivore meals.
Ingredients:
- 8 eggs
- 1 cup of heavy cream
- 2 cups of cheese (adjust to preference)
- 1 teaspoon of Redmond Real Salt
Instructions:
- Preheat your oven to 325°F.
- In a mixing bowl, crack 8 eggs and add 1 cup of heavy cream. The key here is to maintain the ratio – too many eggs without enough cream and fat can result in a dry, tough and less flavorful frittata.
- Mix the eggs and cream thoroughly. Add 1 teaspoon of Redmond Real Salt for flavor enhancement.
- Prepare an 8×8 baking dish by lining it with parchment paper.
- Pour the egg and cream mixture into the baking dish. Ensure it’s evenly spread.
- Mix 2 cups of cheese into the frittata mixture. Adjust the amount of cheese based on your preference.
- Place the baking dish in the preheated oven set at 325°F and bake for approximately 25 minutes. Keep an eye on it to ensure it cooks to perfection.
- Once the frittata is done, take it out of the oven. A well cooked frittata should have a fluffy texture and be golden brown on top.
- Allow it to cool a bit before cutting it into portions. Transfer the frittata portions into a container for easy storage.
Now, you have a delicious and fluffy frittata ready to go for your carnivore meal prep.
2- Beef Ribs
Beef Ribs is a carnivore classic. This hearty and comforting dish not only embodies the essence of carnivore indulgence but also speaks to the simplicity that defines a carnivore lifestyle. Being a source of protein and flavor, beef ribs take center stage in this carnivore friendly recipe. Whether cooked in an instant pot, pressure cooker, or the traditional pot method, the result is an appetizing, flavorsome and tender delight that effortlessly falls off the bone. Let’s dive into the details of this carnivore recipe and find the comfort, convenience and satisfaction that this meal brings.
Ingredients:
- Beef ribs (approximately 3 pounds)
- 4 cups of water
- 3 teaspoons of salt
Instructions:
- If you have an instant pot or pressure cooker, this beef ribs recipe is about to make your carnivore journey even more delightful. If not, don’t worry – a regular pot will work too, it just requires a bit more time.
- Open up your pack of beef ribs. For this recipe, you’ll need about 3 pounds of beef ribs.
- In your cooking vessel (instant pot, pressure cooker, or pot), pour in about 4 cups of water.
- Add the beef ribs to the water. As a general rule, consider adding 1 teaspoon of salt for every pound of meat. Since we have almost 3 pounds of beef ribs, go ahead and add 3 teaspoons of salt.
- Lock the lid of your instant pot or pressure cooker. If you’re using a regular pot, cover it securely.
- Cook on high pressure for approximately 1.5 hours. However, note that the cooking time may vary. In this case, it took about 2 hours to achieve that perfect fall off the bone tenderness.
- Once cooked, carefully unlock the lid. Behold the juicy beef ribs, ready to be served. The meat should be so tender that it falls off the bone effortlessly.
Serve it up as a hearty soup, preserving some of the flavorful broth. This dish not only satisfies your carnivore cravings but also provides a convenient option to warm up at work, ensuring a tasty meal.
Meal 3: Pan Seared Salmon
Beyond its delectable taste, salmon stands as a nutritional powerhouse in the carnivore diet, providing essential omega 3 fatty acids and protein. The wild salmon chosen for this recipe not only adheres to carnivore principles but elevates them. The simple yet effective preparation involves a careful drying, seasoning, and searing, resulting in a juicy and flavorful salmon filet.
Ingredients:
- Wild Salmon filet (approximately 12 ounces)
- Salt
- Ghee
Instructions:
- Begin with a high quality wild salmon filet, and for this prep, I am using a 12 ounce portion from Costco.
- Pat the salmon filet dry using paper towels. This step is crucial to prevent steaming during cooking.
- Sprinkle the filet generously with salt, ensuring it’s evenly coated.
- In a hot pan, add ghee. Ghee is an excellent choice due to its high smoke point, preventing burning during cooking. Once the pan is hot and you hear that satisfying sizzle, carefully place the salmon filet in the pan.
- Allow the salmon to cook for about 5 minutes on the first side. You’ll know it’s ready to flip when the edges become golden brown.
- Flip the salmon using a spatula or by giving it a gentle shake. Admire the beautiful golden sear on the cooked side.
- Continue cooking for an additional 2 minutes on the other side. The result? A perfectly seared and mouthwateringly delicious salmon filet.
- Allow the salmon to cool slightly before transferring it to your container for easy storage.
Indulge in the simplicity and exquisite taste of this pan seared salmon, a carnivore friendly dish that effortlessly elevates your meal prep journey.
4- Oven-Baked Chicken Thighs – Carnivore Comfort on a Tray
These oven-baked chicken thighs will offer a convenient and delicious option for your carnivore meal prep journey. Beyond being a palate-pleaser, they stand as a key protein source, incorporating the simplicity and versatility cherished in the carnivore diet. With a pound and a half of juicy chicken thighs, this recipe marries ease with flavor. Whether air-fried, stove-cooked, or baked in the oven, this preparation delivers a crispy exterior and juicy interior that defines carnivore comfort on a tray. These chicken thighs will add a savory chapter to your carnivore meal prep journey.
Ingredients:
- Chicken thighs (approximately 1.5 pounds)
- Salt (for seasoning)
- Ghee
Instructions:
- Begin with about a pound and a half of chicken thighs.
- Preheat your oven to 425°F, getting it ready to transform these chicken thighs into pieces.
- Lay the chicken thighs out on a baking sheet, creating a single layer for even cooking.
- Sprinkle salt generously over the chicken thighs, ensuring both sides are well-seasoned.
- If oven baking is your preferred method (though air frying, stovetop, or pan-frying are options too), prepare the baking sheet by spreading some ghee.
- Lay the seasoned chicken thighs on the ghee covered baking sheet.
- Place the baking sheet in the preheated oven and let the magic happen for about 30 minutes.
- Once cooked, the chicken thighs should exhibit a delightful crispiness on the outside, promising a juicy and flavorful interior.
- Carefully transfer the cooked chicken thighs to your container, letting them cool off a bit before sealing in.
Meal 5: Mini Beef Sliders
Simplicity often takes center stage in carnivore eating and cooking, and these savory sliders/burgers is the perfect example of this principle. These bite sized wonders offer a perfect harmony of flavor and convenience. I use 80/20 ground beef, which provides just the right balance of lean meat and fat for a rich taste that carnivores crave. They are easy to prepare, delightful to savor, and a perfect companion for those busy days in your carnivore journey.
Ingredients:
- 80/20 ground beef (ground)
- Real Salt
Instructions:
- Start by preparing your ground beef, which can be found at Kroger or your local grocery store. The 80/20 ratio of meat to fat ensures a juicy and flavorful burger.
- Cut the beef into small portions to create mini sliders. A simple technique is to divide the beef into six equal pieces, each weighing approximately two ounces. This ensures uniform cooking and perfectly sized sliders.
- Handle the ground beef gently. Avoid overworking it as excessive handling can result in tough burgers. Simply shape the portions into small patties without compacting them too much.
- Season both sides of the beef sliders with Real Salt or your preferred seasoning. This adds flavor and enhances the taste of the juicy beef.
- Heat your preferred cooking pan (carbon steel or ceramic one) over medium heat. I use my favorite carbon steel pan that works wonders. It is non-stick and you can scrape it with metal spatulas and steel wool without any damage. Also it lasts forever without the toxic chemicals in other pans.
- Ensure the pan is hot before adding the sliders to achieve a satisfying sizzle.
- Carefully place the sliders in the hot pan and cook them for a few minutes on each side. It’s recommended to slightly undercook the sliders to leave room for reheating later without drying them out.
- Once the sliders are cooked to perfection, with a golden-brown crust on each side, remove them from the pan and let them cool slightly.
- Transfer the mini beef sliders to a container for easy storage. These bite sized delights are not only convenient for meal prep but also irresistibly delicious, making them the perfect carnivore friendly option for any occasion.
Enjoy the convenience and flavor of these mini beef sliders, a delightful addition to your carnivore meal prep.
Meal 6: Sizzling Sirloin Strips
The last carnivore meal prep is sizzling Sirloin Strips. This is budget-friendly and often on-sale cut that transforms into a carnivore delight when expertly sliced into strips, ensuring a juicy and flavorful experience. Recognizing that sirloin tends to be lean, cutting it into strips not only preserves its juiciness but also elevates its taste profile. So get ready to elevate your carnivore meal prep with these succulent sirloin strips, proving that simplicity and budget friendly options can coexist in carnivore culinary excellence.
Ingredients:
- Sirloin cut (approximately 2 pounds)
- 2 teaspoons of salt
Instructions:
- Begin with about 2 pounds of sirloin. Slice it into strips, lengthwise, to yield about three hearty portions. This method prevents the meat from drying out, as sirloin tends to be lean.
- Sprinkle 2 teaspoons of salt generously, ensuring each strip is well-seasoned on all sides.
- Reuse the savory grease from the earlier sliders/burgers prep in the pan, providing a flavorful foundation for the sirloin strips.
- Cook the sirloin strips for approximately 3-4 minutes on each side. This quick cooking time retains the juiciness of the strips.
- Once sizzling and golden brown, remove the sirloin strips from the pan and let them cool slightly before transferring to a container. It’s wise to slightly undercook them, allowing for a perfect reheat without overcooking later.
- Marvel at the tempting goodness of these sirloin strips, and feel free to dive into one for a sneak peek of the carnivorous joy that awaits.
