Easy Low Carb and Paleo Meatloaf Recipe

Cook time: 50 minutes
Ingredients:
1 tablespoon coconut oil or ghee (order ghee or coconut oil here)
1/2 medium white onion, diced
1 green pepper, diced
1 red pepper, diced
2 cloves garlic, minced
2 lbs ground beef (order grass fed beef here)
2 eggs
1 tablespoon cumin (order here)
1 teaspoon paprika (order here)
1/3 cup tomato paste (order here)
1 cup homemade broth (order here)
Directions:
Preheat the oven to 350 degrees and place the parchment on a rimmed cookie sheet. Melt the fat in a skillet over medium heat. Add the onion and peppers, with a pinch of salt and pepper to the skillet. Saute the pepper mixture for two minutes before adding the garlic. Saute the garlic until translucent. Remove the skillet from the heat and place the vegetables in a large bowl. Add the meat, eggs, cumin, paprika and a pinch of salt and pepper. Use your hands to mix the meat, spices and vegetables until well combined. Place the meat on the lined cookie sheet and form into a rectangle shape, about 3 inches thick. Bake the meatloaf for 30 minutes. While it is cooking, heat up the same skillet over medium heat and add the broth and tomato paste. Simmer the tomato mixture until it begins to thicken up about 7-10 minutes. Spread the tomato mixture over meatloaf and bake it for 20 minutes or until done. Slice and serve with cauliflower mash or other vegetable of choice and enjoy.
