Gluten Free Molasses Blondie Brownies
My Dad’s doctor tells him not to eat chocolate because of the caffeine so I made these dairy, grain and gluten free molasses blondie brownies for him when I was visiting in Nashville. These Paleo treats were a big hit at our family dinner. Most people don’t realize that Blackstrap molasses is usually gluten free (read labels and trust your instincts) and it has a lot of minerals and vitamins. It has been used historically as a health tonic because it can have up to 20% of the recommended daily value of calcium, magnesium and potassium. Make sure to get one that is organic because some molasses can be made from genetically modified sugar beets. Besides being healthier than man other sweeteners molasses it has a rich taste and dark color.
Gluten Free Molasses Blondie Brownies
- Prep time: 5 min
- Cook time: 30 min
- Serves: makes 4-6 brownies
Ingredients:
1/4 cup coconut oil or grass fed butter, melted
1/4 cup blackstrap molasses
(for a lower carb option use 1 tsp stevia powder extract or 1/4 cup xylitol)
1 tsp vanilla extract
2 eggs (soy free)
1/2 cup almond flour
1/4 cup coconut flour
1/2 tsp baking soda
1/4 tsp sea salt
1 tsp nutmeg
1/4 cup chopped walnuts (optional)
*always use organic ingredients whenever possible
Directions:
Preheat the oven to 350 degrees.
Mix the wet ingredients in one bowl.
Sift the coconut flour.
Mix the dry ingredients in another bowl.
Combine the two mixtures and pour into a small baking dish.
Bake for 30 minutes.
Cool and serve.
