Keto Chocolate Almond Cookie Recipe
I made these cookies for an essential oils class I taught yesterday. It was really fun and the cookies were a big hit. They were chewy and full of chocolate goodness. They are made with healthy and blanched almond flour and easy to throw together in no time for your family to have a wholesome, Paleo friendly treat. A big problem with regular cookies is that they are full of processed white flour and refined sugar that spikes blood sugar. These ingredients have a lot more nutrition packed into each bite that will make them more satisfying and easier to digest.

Keto Chocolate Almond Cookie Recipe
Ingredients
- 1 cup blanched almond flour
- 1/2 cup cocoa powder
- 1 cup swerve for low carb/keto
- 1 teaspoon stevia
- 2 eggs beaten
- 1/2 teaspoon vanilla extract gluten free
- 1/4 cup palm shortening melted
- or coconut oil
- 1/4 cup slivered almonds for topping
Instructions

Preheat the oven to 350 degrees and cover a cookie sheet with parchment paper.

Mix almond flour, cocoa powder, and sugar together in a large bowl with a whisk.

Mix the eggs, vanilla, and oil in another bowl.

Combine the mixtures scoop out onto the prepared baking sheet in 2 inch mounds.

Top with slivered almonds and bake for 10 to 12 minutes.

Remove the cookies from the oven and let them cool for 10 minutes before serving.
Recipe Notes
Paleo sweetener option: Use 1/2 cup coconut sugar (order here) in place of stevia or swerve
