These Keto Chewy Chocolate Chip Cookies are gluten free and dairy free which is perfect for a low carb or Paleo dieter. They are easy to make and the Vital Proteins Gelatin gives them have a little extra bite that makes them unforgettable. I baked these as a dessert for a family barbecue and my family who eats gluten free and mostly keto, all went crazy over the taste of these chewy cookies. The yummy texture comes from using a little bit of grass fed gelatin.
These keto chewy chocolate chip cookies have many health benefits because they are low carb and sugar free with lots of healthy fats and antioxidants from dark chocolate. One thing many people may not realize is that gelatin from pastured, grass fed animals is a missing ingredient in the Western Diet because so many people eat a vegetarian meals or only eat boneless skinless meat such as chicken breast.
As a nutrition consultant it is a pet peeve of mine to see so many Americans missing the crucial components found in gelatin which are building blocks for a strong immune system, as well as gut and skin health. The best way to get it is to make pastured chicken or beef broth but many people don’t have time to do this laborious process. Keto Chewy Chocolate Chip Cookies
These Chewy Chocolate Chip Cookies are the real deal! They are quick and easy best cookie dough recipe that taste amazing. So make yourself enjoy this delicious dessert without a guilt!
Ingredients
- 3 eggs
- 1/2 cup palm shortening or coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon apple cider vinegar
- 3/4 cup swerve See notes below
- 1/4 cup coconut flour
- 1/2 teaspoon baking soda
- 2 tablespoon Vital Proteins Gelatin (not collagen)
- 1/2 teaspoon sea salt
- 1 cup almond flour
- 5 ounces 90% dark chocolate chopped
Instructions

Preheat the oven to 350 degrees.

Mix the eggs, oil, vanilla, vinegar and sweetener in one bowl until throughly combined.

In another bowl mix the coconut flour, baking soda, Vital Protiens Gelatin, sea salt and almond flour with a whisk.

Combine the two mixture into one bowl and stir until well mixed.

Add in the chopped chocolate and stir until well distributed.

Prepare a cookie sheet with parchment paper.

Using two spoons place a golf ball sized portion of dough onto the cookie sheet leaving about 1 inch around each cookie for it to spread out.

For a more crispy cookie, flatten out the dough slightly with the bottom of the spoon.

Bake for 15 minutes or until the cookies are golden brown and cooked in the middle.

Remove the cookie sheet from the oven and slide to cookies, while still on parchment, onto a countertop to cool for 15 minutes.

Recipe Notes
There are four sweetener options based on your preference: 3/4 cup Birch Xylitol, 2 teaspoons stevia, 3/4 cup Coconut Sugar (nutrition facts are based on stevia option)

You look amazing I tried keto but I gained weight. I now just eat grainfree and very little food. I’ve lost the weight I gained on keto. I still eat some fat and of course grassfed beef. I eat a little rice products on occasion, a pear everyday for digestion and home grown vegetables.
