Low Carb and Keto Peanut Butter Cookies
Peanuts have a mold called aflotoxin that has been studied as a possible carcinogen but darn they are so yummy! If you have a sensitivity or allergy to peanuts then this Low Carb and Keto Peanut Butter Cookie Recipe also works with almond butter.
Peanuts are technically a legume that contain lectins and phytates and cause digestive irritation. Traditionally, people soaked and sprouted beans, nuts, and seeds to reduce hard to digest properties but that has fallen out of fashion in our fast-paced culture. You can easily soak your peanut or almonds overnight then grind them to reduce anti-nutrients before making your own nut butters.

Low Carb and Keto Peanut Butter Cookies
These delicious, simple Low Carb and Keto Peanut Butter Cookies are made with coconut flour and peanut butter. You can use the same recipe with almond butter as per your liking!
Ingredients
- 1 cup peanut butter or almond butter smooth or chunky
- 2 eggs
- 1/2 teaspoon apple cider vinegar
- 1/4 cup coconut flour
- 1/2 teaspoon baking soda
- 1/2 cup swerve
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon sea salt
Instructions

Preheat the oven to 350 degrees.

Mix the eggs, almond butter and vinegar in one bowl, then sift in the coconut flour and baking soda.

Next, mix in the sweetener, vanilla, and salt.

When the mixture is well combined, spoon one-inch mounds onto a parchment paper covering a cookie sheet.

Take a fork and press the down on the top of the dough to make an indention.

Bake for 12-15 minutes until golden brown, remove from the oven. Let the cookies cool off, serve and enjoy.
Recipe Notes
Paleo Version: 2 teaspoons stevia extract, use almond butter because peanuts are a legume and not helpful for digestion.

Can you clarify your nutritional info please? Approximately how many cookies does this recipe yield and is that 13 carbs per cookie or serving?
Xylitol is a known cancer causing agent.
Xylitol is known for causing stomach upset.
Any form of fake sweetener is just not a good choice. I love this recipe but would not use xylitol for any baking use. Talk about chemical use. I understand the battle of the bulge but I’ll take sugar over xylitol any day.
