This pudding is one thing I have been craving so I made this quick and easy recipe. I am crazy for pumpkin all year and I keep it in my pantry. Chia is a nutritious seed that adds texture to this recipe without extra carbs. The coconut milk makes this recipe keto friendly by adding healthy fats. Round it out with some sweetness from the stevia extract and you have a great tasting Keto Pumpkin Chia Pudding. I hope you enjoy this recipe!
Keto Pumpkin Chia Pudding
Ingredients
- 1 13.5 oz canned coconut milk order here, room temperature
- 1 15 oz box pumpkin order here
- 1 teaspoon stevia extract order here
- 1/2 cup chia seeds order here
- 1/2 cup water
- 1 teaspoon cinnamon order here
- 1/2 teaspoon nutmeg order here
- 1/4 teaspoon salt order here
- whip cream for topping optional
- or coconut cream
Instructions

Mix the pumpkin and coconut milk in a large bowl until smooth.

Add the rest of the ingredients and stir until well combined.

Pour the mixture into ramekins and let them sit in the refrigerator for about an hour.

Top with whip cream or coconut cream if desired. Serve and enjoy.
