These chocolate kissed grain free coconut macaroons were a big hit on my little sister’s French themed bridal shower!
Chocolate Kissed Grain Free Coconut Macaroons
Ingredients:
1/4 cup organic sugar or coconut sugar
3 cups unsweetened coconut flakes
1 Tsp pure Vanilla extract (gluten free)
1 tsp Organic Almond Extract
3 extra-large egg whites, at room temperature
1/4 teaspoon high quality sea salt
Directions: Preheat the oven to 325 degrees F.
Whip the egg whites of an Smart Stick Hand Blender with Whisk (my favorite kitchen tool!) fitted with the whisk attachment until they make medium-firm peaks. Mix the vanilla and almond extract into the egg whites. Mix in the sugar bit by bit into egg whites. Then carefully fold the coconut little by little into the stiff egg whites. Drop the batter onto sheet pans lined with parchment paper using either a 1 3/4-inch diameter ice cream scoop, or two teaspoons. Bake for 15 minutes, until golden brown. Cool and serve. Makes about 15 cookies
For the Chocolate Dip: Melt 6 oz 70% Dark Chocolate Organic Semi-Sweet Baking chocolate.over a double boiler or a glass bowl over a saucepan with shallow simmering water (don’t let the water touch the bottom glass bowl). When the macaroons are cooled dip one edge of the cookie into the chocolate. Place the cookie on parchment. Wait 10 minutes or until the chocolate is set to serve or eat (waiting is optional…lol).
From Grass Fed Girl: My husband is a chef and he made these chocolate kissed grain free coconut macaroons for my little sister’s French themed bridal shower in December. They were a big hit and there was only one left at the end. We had to hide the one cookie so the groom could try it. We made triple this recipe for the party.
