Chewy Keto Almond Cookie Recipe
I created this chewy keto almond cookie recipe last week before I went to a friends party. They are kind of plain but sometimes that is all you want or need. I used blanched almond flour for this recipe. It was nice to have a cookie at the party that was gluten free when all the other options had flour. I always recommend bringing your own dish to any party so there is at least one thing you can eat to avoid feeling deprived. If you don’t plan to succeed chances are you will fall into temptation or make yourself sick by eating something at the party that is not aligned with your health goals. I don’t really believe in all the hype around flax being a super food but I love the way it gives texture to Paleo baked goods.

Chewy Keto Almond Cookie Recipe
Ingredients
- 1/2 cup ground golden flax
- 3 medium pastured eggs
- 1 teaspoon stevia extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1.5 cups blanched almond flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 2 tablespoons melted coconut oil
- 1 cup powdered sugar optional, for decoration
Instructions

Preheat the oven to 350 degrees and cover a cookie sheet with parchment paper.

Mix the flax, eggs and sweetener in one bowl until smooth and let it sit until a gel forms, about 5 minutes.

In another bowl mix the spices, almond flour, baking soda and sea salt.

Combine the two mixtures and stir in the coconut oil until blended.

Roll the cookies into 1 inch balls and place on the cookie sheet.

Flatten them with your hands.

Bake the cookies 12-15 minutes until golden brown.

Remove the cookies from the pan and cool on a baking rack for 10 Minutes.

Cover them in powdered sugar, if desired, and serve.
Recipe Notes
For Paleo version: 1/4 cup honey instead of stevia and use only 2 eggs

I am surprised to see sugar as part of a paleo recipe, even if it’s optional. A better choice might be powdered erythritol or powdered xylitol. Evaporated Cane Juice IS sugar (organic or not)… JM2cents.
So is honey. Sugar is sugar. I gave a stevia option. The sugar is purely decorative.
