I made this low carb dish for my family because they often do keto diets and want to eat comforting recipes such as spaghetti sauce with noodles. This one got rave reviews and it is a repeat weekly in our house. The flavor comes from adding broth to the sauce instead of water. Also it is easy to keep tomato paste on hand in your pantry so you will always be ready to whip up something yummy.
Low Carb Homemade Spaghetti Sauce Recipe
Prep time: 10 minutes
Cook time: 20 minutes
Serves: 4
Ingredients:
1 tablespoon avocado oil (order here) or olive oil
1/2 white onion, diced
1 lb ground beef (I use grass fed beef, order here)
1 teaspoon sea salt (order here)
1/2 teaspoon pepper (order here)
2 cloves garlic, minced
2 cups mushrooms, sliced
3 oz tomato paste (order here)
1 tablespoon dried oregano (order here)
1 tablespoon dried basil (order here)
3 cups bone broth (make my recipe here) or (order here)
2 packages Miracle Noodles (order here) or cooked spaghetti squash
fresh chopped parsley, for topping
Directions:
Drizzle the oil in a saucepan over medium heat. Add the onions and sauté until translucent. Add the mushrooms to the pan and cook for 5 minutes until soft. Add the meat, salt and pepper, garlic, and spices while stirring to break it up for 5 minutes or until the meat is browned. Add the tomato paste and broth and stir slightly and bring the mixture to a boil. Turn the mixture down to medium low, cover the pan and let the mixture simmer for 10 minutes. Remove the lid and simmer a few more minutes to cook off the excess water. While the sauce is finishing, drain the noodles and place them in a frying pan with some more avocado oil to warm up for about 5 minutes. Place the noodles on plates and top with sauce and parsley.

What are your comments on the Miracle Noodles being “rubbery”? Do you have a solution for the texture issue that so many reviewers discussed on Amazon?

They will never be normal noodles but I think a good sub on occasion. I like to add them to the sauce and warm up for a minute. I think that helps. Thanks for reading.
