I made these easy low carb meatballs for my dad when he came over to help me hang a picture. I had to run around doing errands before so I could not sit by the stove. This is perfect for when you are on the go. You can set up the slow cooker with this great Paleo recipe then run to a few shop and come home and they will be ready to eat. I made cauliflower mash to serve them with which is a great low carb, paleo substitute for mashed potatoes.
Easy Meatball Crock Pot Recipe
Prep time: 20 minutes
Cook time: 2 hours inactive
Serves: 6
For the meatballs:
Ingredients:
2 lbs ground beef (I like this one)
1 tablespoon cumin
1 teaspoon paprika
2 cups bone broth (or use my recipe here)
2 heaping tablespoons tomato paste
handful fresh parsley, diced
For the cauliflower:
1 large head a cauliflower
Directions:
Place meat in a bowl with cumin, paprika, and generous salt and pepper and mix well. Form the meat into 1 inch balls and place in the bottom of the a slow cooker. Mix the broth and the paste in a bowl then pour it over the meatballs. Turn the slow cooker on high and cook for two hours. After the meatballs are done cut the cauliflower into florets. Steam the florets until cooked but not mushy. Drain the water, add the butter, and generously add salt and pepper. Use an immersion blender to blend it until smooth. Place the cauliflower mash onto plates, add meatballs with desired amount of sauce on top and top with parsley. Serve and enjoy.
AIP version:
Use 1 teaspoon turmeric and 1 teaspoon ground ginger in place of cumin and paprika. Also use 1 cup canned pumpkin in place of tomato paste.
