I made these lamb chops for my dad one day when he came over for lunch to my house in Nashville. He loves lamb chops because they have so much flavor and the fat on top makes a great crust. I love meat on the bone because it has so much more flavor than boneless and the added bonus that it comes with a handle for ease of eating.
This is a great meal for someone on a low carb ketosis diet because it has healthy fats and moderate protien. Served with a low carb vegetable like asparagus which are also low in pesticides as well as carbs can be a perfect way to round out the meal. Lamb is a meat that can be high in fat which is a good thing if it is grass fed because it has a healthy balance of omega-3 to Omega 6. To find grass fed lamb look for Australia or New Zealand on the label or choose from a US online source I recommend here.
Keto Lamb Chops Recipe with Paleo Pesto Sauce
Prep time: 30 minutes
Cook time: 10-15 minutes
Serves 4
Ingredients:
1 rack of Lamb (order lamb here)
Sea salt (order here)
pepper (order here)
2 tablespoons ghee (order here)
4 cups basil leaves
1/2 cup pine nuts (order here) or walnuts
1/2 cup olive oil (order here)
juice of 1 lemon ( add 2 drops lemon vitality essential oil for an extra punch of flavor)
Directions:
Heat up the oven to 350 degrees. Place an oven safe skillet over medium-high heat and melt the ghee. Sprinkle the lamb with ample salt and pepper. When the skillet is hot, place the lamb down on one side to sear it for 1 minute while pressing slightly. Then rotate around until all sides are seared. Place the skillet with the lamb into the oven and bake for 7-10 minutes for medium or more for well done. Remove from the oven and place on a cutting board to rest. While the lamb is resting place the salt and pepper, basil, pine nuts, olive oil, and lemon in the food processor. Pulse the mixture until smooth and add a little more oil if needed and scrape down the sides until well combined. Slice the lamb between the bones and arrange chops on plates. Top with pesto, serve and enjoy.
