One Pot Paleo Chili –
I am not a perfectionist, much more of a “wing-it” type of girl. This approach has worked pretty well for me so far because my life is pretty awesome. So trust me, this “just wing-it” chili is great. It is cheap and easy, and will make you slim, too, as long as you share with others.
Don’t worry about the fat in the meat because if you are eating grass fed beef, it contains a powerful fat burner called Conjugated Linoleic Acid. CLA is sold at GNC as an expensive weight loss supplement. So there’s no need to use paper towels to sponge off fat from your browned beef like I did in the 90’s. That fat is nature’s little care package for us! Don’t mess with perfection. Mother Nature does not screw up meat, we humans do that, with our factory farms and corn-fed cows right before slaughter.
Anyway back to the point, this is kickin’ chili! It will keep you warm on a cold night, or it’s the perfect thing to take to a tailgate party. No one will miss the beans or chips. Since it is full of vegetables you will get your fiber and antioxidant fix, too.

One Pot Paleo Chili
Ingredients:
1 bunch fresh cilantro (for garnish)
2 ripe avocados (for garnish)
3 fresh chopped tomatoes
1/2 can tomato paste
3 garlic cloves
1 tsp paprika
1 tsp sea salt
1 tsp chili powder or to taste
1-2 Tbsp cumin
1 chopped onion
1 red pepper, diced
1 green pepper diced
2 medium shredded zucchini
2 lbs grass fed ground beef
