One Pot Paleo Chili –

One Pot Paleo ChiliI am not a perfectionist, much more of a “wing-it” type of girl. This approach has worked pretty well for me so far because my life is pretty awesome. So trust me, this “just wing-it” chili is great. It is cheap and easy, and will make you slim, too, as long as you share with others.

Don’t worry about the fat in the meat because if you are eating grass fed beef, it contains a powerful fat burner called Conjugated Linoleic Acid. CLA is sold at GNC as an expensive weight loss supplement. So there’s no need to use paper towels to sponge off fat from your browned beef like I did in the 90’s. That fat is nature’s little care package for us! Don’t mess with perfection. Mother Nature does not screw up meat, we humans do that, with our factory farms and corn-fed cows right before slaughter.

Anyway back to the point, this is kickin’ chili! It will keep you warm on a cold night, or it’s the perfect thing to take to a tailgate party. No one will miss the beans or chips. Since it is full of vegetables you will get your fiber and antioxidant fix, too.

One Pot Paleo Chili
Get Your Antioxidants!

One Pot Paleo Chili

Ingredients:
1 bunch fresh cilantro (for garnish)
2 ripe avocados (for garnish)
3 fresh chopped tomatoes
1/2 can tomato paste
3 garlic cloves
1 tsp paprika
1 tsp sea salt
1 tsp chili powder or to taste
1-2 Tbsp cumin
1 chopped onion
1 red pepper, diced

1 green pepper diced
2 medium shredded zucchini
2 lbs grass fed ground beef

 

          Directions:

Saute the meat in a large pot until mostly done, remove and put into a separate bowl. Saute the onion, garlic, and peppers until soft in the beef grease. Then add all the rest of the ingredients into the pot and fill 2/3 of the way with water. Cover and cook on medium/low heat for 30 minutes, stirring frequently. If it is too thin leave lid off and simmer for 5-10 more minutes until it thickens. Serve with avocado slices on top and cilantro garnish. Serves 6-8.
Change It Up:
Add some 3-4 oz of grass fed beef or pastured chicken liver. No one will know the difference except but they get a good serving of fat soluble vitamins and brain boosting DHA.
