Mediterranean Paleo Chicken Salad (SCD, Gaps)

Mediterranean Paleo Chicken Salad –

I love Paleo chicken salad because it is free of rancid oils that are used in traditional recipes that have soybean or canola oil mayonnaise.

Mediterranean Paleo Chicken Salad

Ingredients:

1 roasted chicken (organic, soy-free and pastured is best)

(Try my easy roasted chicken recipe) (or Rotisserie will work)

1/2 cup of olive oil mayo, recipe below

1/4 cup fresh cilantro, chopped

1 head of romaine or butter lettuce

1 red onion, diced

1 lemon, juiced

Sea salt and pepper as desired

(always choose organic produce when possible)

Directions:

Shred the chicken with your hands or chop up and put it in a big bowl.

Add the homemade mayo (below), red onion, cilantro, lemon, sea salt and pepper.

Mix well and serve on a lettuce boat.

Olive Oil Mayo:

Ingredients:

4-5 egg yolks, at room temperature (soy-free organic is best)

1 cup of olive oil (I like this one)

1 Tbsp of lemon juice

Sea salt and pepper

Directions:

Beat the eggs in the food processor for a few seconds.

Slowly add the olive oil in a continuous drizzle.

Keep the food processor going until a nice emulsion forms.

You may not need all of the olive oil.

Add the lemon juice and beat a little more.

Refrigerate immediately.

This will keep for about a week.
