Egg and Nut Free Keto Pumpkin Pie
I have a lot of readers who can’t eat eggs or nuts. I wanted to make an Egg and Nut Free Keto Pumpkin Pie that is suitable for those people. Many people who may be on autoimmune protocol add back seeds first so this could suit them too. I made this for Thanksgiving. My dad made a gluten free pumpkin pie and people were saying mine was just as good. I was so happy to have something to eat that was just right for my needs. This year I was lucky and there were a lot of gluten free options at our celebration.

Egg and Nut Free Keto Pumpkin Pie
This Paleo, Egg and Nut Free Keto Pumpkin Pie is perfect for your Thanksgiving festivities! It is just as delicious as those traditional sugary versions!
Ingredients
- FOR FILLING:
- 2 tablespoons Vital Proteins Gelatin
- 1/4 cup water
- 1 cup coconut milk full fat
- 2 cups pumpkin puree
- 1 teaspoon stevia extract powder *sweetener option
- 1 teaspoon cinnamon
- 1 teaspoon ginger
- FOR CRUST:
- 1/3 cup water
- 1 1/2 cup raw sunflower seeds
- 1/2 cup ground golden flax
- 1/4 teaspoon sea salt
- 1/3 cup melted ghee or coconut oil
- whipped coconut cream (recipe here)
Instructions

Preheat the oven to 350.

Mix the crust ingredients in a food processor and place the balled up dough in a pie dish.

Press the mixture around evenly on the bottom and sides.

Place it in the oven to bake for 10 minutes to 12 minutes until golden brown.

Set it aside until you make the custard.

Mix the water and the gelatin in a sauce pan and place it on the stove over medium heat.

Add the coconut milk and pumpkin, let it come to a simmer while stirring continuously.

Remove the pan from the heat and add the spices and stevia and stir until well mixed.

Pour the pumpkin mixture into the crust.

Set the pie into the refrigerator for one or two hours until set.

Slice and enjoy.

Slice, top with whipped coconut cream or organic/ grass fed heavy cream and enjoy.
Recipe Notes
Optional sweetener option for Paleo version: 1/2 cup honey instead of stevia
