I met this awesome client in the fall of 2012. She came to me with some health concerns and she wanted to look great on her daughter’s wedding day in December 2012. We hit if off right away, mostly because she did everything I said with a smile on her face. I taught her all about grain free, traditional foods and she ate it up (and slimmed down in the process)! In this post I asked her some questions about her great success.

Why did you go to a nutritionist?
I wanted to look and feel healthy for my daughters wedding. My doctor was also concerned that I had high morning blood sugar and high cholesterol. I had even taken Statin drugs for a while but I was concerned about the side effects and wanted to try a more natural food based intervention. I had a lot of cravings for bread, rice, and even candy, including my favorite, red licorice. I was also confused about what is healthy because there is so much conflicting information in the news. I wanted to know which foods were going to help me lose some weight without being hungry. I had recently gone through menopause and it seemed like gaining weight and feeling tired was just something I had to deal with. I had also put on belly fat that just didn’t seem to budge.
What was your diet like before meeting Caitlin?
I ate a lot of veggie burgers and rice, plus I ate foods I thought were healthy like tofu and cereals. I used to skip breakfast a lot but then I had uncontrollable hunger later in the day. I love chips and salty snacks too. I went out to eat a lot so I didn’t really know what I was eating!
What happened when you changed your diet?
I lost weight over the course of several months. I was no longer hungry between meals. I started sleeping better and my energy improved. I got over my sugar cravings easily and now I am able to turn down sweets.
And best of all: When I went back to my doctor, she was pleased with my blood work and said I didn’t need any medication!
Last but not least: I lost 15 lbs of flab off my belly and arms!
What are you more aware of now in terms of your health or diet?
- I cook and eat at home more often and buy organic food whenever I can.
- I watch out for inflammatory foods like vegetable oils, soy and bread.
- I exercise for fun now not because I am trying to burn off calories.
- I eat until I am full but not stuffed because these foods are so satisfying.
- I enjoy healthy fats now without worrying about getting putting on weight.
- I sleep better and wake up rested. I am not always thinking about my next nap.
- I am in a better mood and have a sunny outlook because my blood sugar is stable.
How did it feel when you reached your goal?
I felt so confident and healthy at my daughter’s wedding. All of our family was in Hawaii on that big day. It was her moment but I was glad I didn’t spend it worrying about how I looked. I wanted to show my toned arms and I felt younger too. I got so many compliments from everyone. It was a wonderful day where I was so proud of my daughter and myself too. What would you tell someone else who is just starting out on a healthy lifestyle?
It gets easier! Just give it a few weeks and your cravings for junk will go away. You will start to want healthy foods like grass fed beef and butter. I thought I would never give up bread and sweets, but now I do not even think about them.
