I made this Ketogenic Pepperoni Casserole Recipe for my family one day and they loved it. I thought I would share it with my readers. It has two of my favorite things cauliflower and pepperoni. I used Applegate pepperoni which is a little less processed. It is hard to find pastured pepperoni in the grocery, maybe from a local butcher.
We have a great local butcher here in Nashville called Porter Road Butcher. It has lots of specialty items such as broth, rendered fats, organs and bones for making broth. I encourage you to find a place like that near you. You can look on eatwild.com to source some great stuff from local farmers.
This recipe fits into a ketogenic or low carb diet which can really help people lose weight, reduce sugar cravings, improve focus and sleep better. I have used a ketogenic diet off and on for many years with great success. I followed this guide and it helped me get started.
Prep Time: 15 minutes
Cook Time: 60 minutes
Serves: 4
Ingredients:
1 large head cauliflower, cut into florets
2 eggs (get pastured eggs here)
1 13.5 oz can coconut milk (order here) (1.5 cups heavy cream will work)
2 tablespoon ground golden flax (optional, order here)
1/2 teaspoon sea salt (order here)
1/2 teaspoon black pepper (this one)
1 4 to 6 oz package sliced pepperoni (I use this one)
Directions:
Preheat the oven to 350 degrees. Steam the cauliflower florets until aldente (just barely cooked) place them in a medium sized greased casserole dish. Mix the eggs, coconut milk, flax, and salt and pepper in a bowl until well combined. Pour the mixture over the cauliflower. The liquid should mostly cover the cauliflower, if not try a smaller dish. Place the casserole dish in the oven and cook for 40 minutes then place the pepperoni on top. Cook for 10 to 15 more minutes or until the pepperoni is crisp on the edges and the egg mixture is firm in the middle. Remove the casserole from the oven and let it cool for 5 minutes. Serve and enjoy.
