Paleo Chicken Mushroom Tajine with Saffron and Truffle Oil –
I never had saffron or even truffles in my life until I met my husband here in San Francisco. He is a professional chef and he grew up in a French speaking country where truffles are common and even affordable. He made me this great slow cooked tajine which is a common dish in North Africa. We tweaked the recipe a bit by removing the couscous from the recipe to fit a Paleo template.
Truffles are pungent fungus that grow wild in the desserts of south Algeria and are exported worldwide. Truffle oil is more common and affordable in North America so we used that in this recipe. Saffron is also pricey but only a pinch is needs to give this dish a rich flavor and turn the broth a deep orange. Hope you enjoy this exotic taste vacation!
