Paleo Cinnamon Apple Crisp
Ingredients:
6-8 medium organic green apples (like Granny Smith)
4 tbsp grass fed unsalted butter or coconut oil
¾ cup pecan halves
¾ cup walnuts halves
Juice of 2 limes or lemons
2.5 tsp cinnamon
¼ cup honey and 1 tbsp. for topping
½ cup coconut shreds
¼ tsp. real sea salt (use this one)
Directions:
Peel and slice the apples. Mix lemon/lime with apples, warmed melted honey, and cinnamon. Put the apples into a medium size square or oval glass baking dish. Heat the nuts, butter, coconut shreds, sea salt, and 1 tbsp of honey over medium heat until well mixed. Spread the topping evenly over the apples. Bake for 30 min on 350 covered, then remove cover and cook for 30 minutes more.
For the whipping cream:
Just whip cold heavy whipping cream (organic and carrageenan free is better, raw is best) with an electric mixer for 5 minutes. It should stiffen easily. Recently me and my little sister visited my 90 year old Grandpa at his house in NC for several days. We made dinner for my extended family and we wanted to make something familiar that they would not think was too weird or healthy. My sister had the idea to make some kind of cobbler type dessert without the crust. I said we should try apples because they are in season and affordable during the fall.
My sister is a real whiz at baking so I knew the end product would be great. Everyone in our family ate it up so quick. They all wanted more and no one asked “where’s the pie crust”. It was nice that we had something they all liked even though they are not Paleo or on special diets. We did have a little organic whipped cream since we were on vacation. You only live once right? Plus I love whipped cream! I don’t usually eat dairy, except grass fed butter because it makes me feel bloated and I love it way too much!
I hope this dessert enhances your fall celebration but keep sweet and treats to minimum when you are trying to lose weight. I don’t usually eat treats like this on a daily basis. This Paleo Cinnamon Apple Crisp recipe would be a great addition to a Thanksgiving dinner!
