Easy Dairy Free Paleo Chocolate Popsicles

June 23, 2013 By Caitlin Weeks

It is cold and foggy here in San Francisco but every once in while we get a sunny day where you want a Popsicle. I love chocolate fudgesicles so I got inspired to make these easy dairy free paleo chocolate popsicles into in a dairy free version. Theses Popsicles remind me of a million boxes of Weight Watcher pops I used to eat with all the toxic aspartame. Now I can enjoy these creamy pops without frying my brain at the same time with chemicals! A win-win for everyone!

Easy Dairy Free Paleo Chocolate Popsicles

Ingredients:

2 cups coconut milk (make sure to use full fat like this one)

1/2 cup water

3 Tbsp cocoa powder( like to use a raw one like this)

10-15 drops of liquid stevia or

2 Tbsp of raw honey

1/2 tsp vanilla extract (make sure it is gluten free)

Directions:

Mix it all with a whisk until the cocoa powder is dissolved.

Pour it into these great bpa free Popsicle molds.

Freeze for 6-8 hours.

Once they are frozen, dip the end in a bowl of warm water for a minute to get it to come out smoothly.

Enjoy!

At the State University of New York at Buffalo, researchers gave both obese and non-obese women macaroni and cheese every day for five days, while other women were given mac and cheese just once a week for five weeks. The daily mac and cheese eaters ate less than the less frequent eaters, probably because they got so bored with eating the same food every day. This “meal monotony” may be a strategy to help dieters stick with their eating plan and lose weight. If you have too many foods to choose from, it’s likely that you’ll end up eating more.
