Easy Keto Lemon Custard
I made this easy Keto lemon custard for my in-laws who were visiting us. They do not eat sugar free r follow a special diet but they didn’t even notice that this was any different than a regular pudding. Many recipes for custard have a lot more steps and included separating egg yolks or using a double boiler but it is not necessary. Just by turning down the heat while baking this custard will turn out perfectly.

Easy Keto Lemon Custard
Enjoy this sweet but tart and creamy Easy Keto Lemon custard as part of a sugar free and low carb lifestyle. You can also make it dairy free with coconut milk!
Ingredients
- 2 cup heavy cream or 2 cups coconut milk
- 2 tablespoons lemon zest about 2 lemons
- 6 large eggs
- sliced lemons for topping optional
Sweetener
- 1 cup swerve granulated works best
- or Lakanto
Instructions

Preheat the oven to 300 degrees.

Place all the ingredients in a mixing bowl and combine with a hand mixer for 60 seconds.

Pour the ingredients into 1/2 cup ramekins.

Place the ramekins in a large rectangular baking dish.

Prepare a bain marie by pouring boiling water into the baking dish until the outside of the ramekins are covered 3/4 of the way from the top.

Place the baking dish in the oven.

Bake the pudding cups for 45 -50 minutes or until a knife inserted into the center comes out clean.

Remove the puddings from the baking dish.

Let them cool for 30 minutes on the counter, then place in the refrigerator for two hours or until chilled.

Place the sliced lemon on top as a decoration, if using.

Serve and enjoy.
