I had a friend coming over for lunch who told me she had been struggling with digestive issues. I thought this would be the perfect soup to soothe her tummy troubles and fill her with nourishment. It has grass fed beef, healing bone broth and easy to digest slow cooked veggies such as carrots, celery, onions and turnips. Green beans are also an option but if someone is following a very strict version of AIP they can use chopped kale. My guest was so excited about the soup that I sent her home with the leftovers and she was overjoyed. This soup is great for people who are following the Autoimmune protocol on the Paleo diet.
Hearty Low Carb AIP Paleo Vegetable Hamburger (ground beef) Soup
Prep Time: 15 minutes
Cook Time: 45 minutes
Serves: 3 to 4
Ingredients:
1 medium onion, diced
3 stalks celery, sliced
2 medium carrots, sliced
sea salt and pepper
1 Tablespoon Herbs De Provence or Italian seasoning
(Check for non-AIP ingredients in your blend)
16 oz grass fed ground beef
4 to 5 cups bone broth
1 13 oz can pumpkin
3 medium turnips, peeled and diced
1 10 oz bag frozen green beans OR frozen chopped kale
fresh chopped parsley, for garnish
Directions:
In a stock pot over medium heat melt the fat. Add the onions, celery and carrots and season liberally with salt and pepper and seasoning. Saute the mixture until the onions are translucent and add the ground beef, breaking it up with a spatula as it cooks and add a little more salt and pepper. Add the broth and bring to a boil then turn it down to simmer. Add the turnips and cover for 15 minutes. Add the pumpkin and green beans or kale and cook for 10 more minutes until the green beans are cooked. Adjust seasonings to taste, serve into bowls and top with the parsley.

I can’t wait to try this! I always have bone broth and grass-fed ground beef in my freezer and I’m getting pretty tired of the same old things. I never thought to put ground beef in my bone broth so it will be interesting to see how this turns out. It’s also great that it is tomato-free because I can’t have nightshades. Thanks so much for sharing such a creative recipe!
