When we were getting ready to travel to the 2014 Paleo FX convention this year I was so excited (partly so I could write this review). I had to go shopping since pj’s were not an option anymore. My husband had never been to a Paleo convention (just the Low Carb Cruise in 2012) so I was hoping he would have fun and enjoy the educational talks too.
Honesty this whole experience was a blur. Usually I would go to learn but since we were doing a cooking demo and promoting our new book all I could really think about was that. I met a bunch of amazing people and had lots of good conversations but I could only sit down long enough to go to a few talks.
Mostly we stayed on the vendor floor talking to friends and making new ones. We ate lots of snacks including Epic Bars and even cricket bars from Exo. Our Demo went great and we were so excited to get to cook in front of an audience. I gave nutrition advice about the food while my husband Grass Fed Chef gave instructions about the method.
It was a wonderful venue and perfect weather. I was glad it was not hot yet becasue this SF girl can’t take the heat (or cold anymore). The event seemed very organized and everything was on time. When we did our cooking demo everything went off without a hitch. I was amazed how they could have all that food ready to go. Hats off to the organizers!

Later that night we went to the speakers dinner which was held at a tiny urban farm that was so cute right in the middle of Austin! Springdale farm

I saw a panel moderated by Abel James about the state of Paleo with Robb Wolf and Mark Sisson. It was kind of tongue in cheek but a good round up of the current place of the movement. It was good to see some of dogma get put aside.
Ditch the Wheat, Healthy Living How To, Holistically Engineered
Stacy of Paleo Parents and Danielle of Against All Grain (who is expecting a Paleo baby) were so sweet to host a blogger brunch at their Airbnb house across the street from the Palmer, I got to try Tessa Mae salad dressing on Sarah of The Paleo Mom‘s Kale salad.
This is what a paleo blogger brunch looks like: organic egg frittatta, kale, berries, pastured beef salami and rillette, with caviar and nut crackers! I actually made that frittatta in my hotel room efficiency kitchen, lol.

Later we went back to for a speaker panel. This one was about carbs and exercise, I think and it had Ben Greenfield.
This panel was about paleo for women and it had Dr. Lo, Dr Deborah Gordon, Step from Paleo for Women and Diane Sanfillippo
Later than night Carol, me, Steph from Stupid Easy Paleo and Vanessa were eating at the Salty Sow.

After a paleo-filled weekend at paleo fx I went home with my friend Diane to get started on photographing Mediterranean Paleo Cooking which comes out this Fall! Check out sneak peeks on my instagram feed. Here she is with her Fiance Dr. Scott Mills at the airport.
