Basil is great because it is full of phyto-nutrients that fight inflammation and aging. It also a good source of Vitamin C and folate. It also has a lot of nerve relaxing magnesium. It also has bone supporting vitamin K.
It is a great thing to stock up on the the summer when it is plentiful and cheap. This easy paleo chicken pesto is a great recipe to freeze for using when basil is harder to come by.
Easy Paleo Chicken Pesto
1/4 cup olive oil or to taste
1/2 cup raw walnuts or pine nuts
6 cups basil, fresh and clean
sea salt to taste
pepper to taste
4 cloves garlic peeled
1 lb chicken breasts, pastured
1 Tbsp organic grass fed butter
Directions:
Put olive oil, garlic, walnuts, basil, sea salt and in the food processor and blend.
Check the taste and consistency.
You can always slowly add more basil, oil, salt, or nuts until it comes out the way you want it.
For the chicken: put sea salt and pepper on both sides of chicken.
Fillet the breasts if they are too thick.
Cook filleted chicken in butter on medium high heat until brown on both sides.
Plate chicken and top with a couple of spoonfuls of pesto.
Serve with some mixed greens and tomatoes.
