Keto Meatloaf Recipe with Hidden Braunschweiger

I was so excited when I got the news that I was going to get to make recipes with Jones Dairy Farm products. I have been a fan of their all natural breakfast sausage for a long time because it has minimal, clean ingredients. I wanted to take it to the next level and make a keto meatloaf recipe using their delicious Braunschweiger.

Many of my readers tell me all the time that they want to eat organ meats but they are intimidated and don’t know how to cook them. They want all the nutrients of organ meats but don’t know how to make them taste good. Well good news! Jones Dairy Farm Braunschweiger has the answer and they make products that help us push that easy button when it comes to easy and healthy family meals. 

For this recipe, I used Jones Dairy Farm Liver Sausage Chunk. This tasty Braunschweiger is seasoned up perfectly to smooth over the liver flavor and has the right balance of fats and proteins, perfect for your keto or carnivore diet. Also it is low carb and gluten free which will make it fit into any healthy lifestyle. Even kids love liver sausage! I took some over to my nephews and fried it up for them and they had it in the morning with their scrambled eggs.

Braunschweiger is so versatile, that makes it easy to add to keto recipes. My dad and sister love meatloaf so I had the idea to make hidden liver sausage meatloaf for them. I just cut up the Liver Sausage Chunk and mixed it with eggs then combined it with ground beef, cheese, and spices to make a savory and delicious keto meatloaf recipe. No one in my family even noticed that there was any liver because the flavors meld so well with the garlic and Italian seasoning I used. 

It is wonderful to feel good about what I am feeding my husband and extended family. It feels like getting a gold star to make something nutritious and delicious like this keto meatloaf recipe with Braunschweiger.

Keto Meatloaf Recipe

This hearty and delicious keto meatloaf has flavorful herbs, spices, parmesan cheese. Jones Braunschweiger adds depth and texture to this recipe. This low carb and gluten free recipe has a perfect balance of fats and proteins, perfect for keto and carnivore diet and fit for any healthy lifestyle.

Ingredients

  • 4 oz Jones Dairy Farm Braunschweiger – Liver Sausage Chunk
  • 3 eggs
  • 1 ¾ lb 85% ground beef
  • 1 cup shredded parmesan cheese or cheese of choice
  • 1 teaspoon sea salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 1/3 cup tomato paste
  • 1 cup chicken or beef broth

Instructions

  1. Preheat the oven to 350 degrees.
  2. Place the Braunschweiger and the eggs in a food processor and pulse until well mixed.
  3. Pour the egg mixture into a large bowl and add the beef, cheese, salt, pepper, garlic and Italian seasoning.
  4. Use your hands to mix them until well combined.
  5. Transfer the mixture to baking pan.
  6. Bake for 30 minutes.
  7. In a small saucepan over medium heat, mix the tomato paste and the broth.
  8. Keep stirring and let the sauce reduce until it thickens.
  9. Add the sauce evenly on top then bake for 15 more minutes.
  10. Remove the meatloaf from the oven, let it cool for 5 minutes.
  11. Slice, serve and enjoy.

    Great recipe Caitlin, will go on the carnivore diet for a month or so and see what happens with some pain issues. I am on Keto which has been great.
    The issue is the liverwurst you use in the recipe isn’t available in Australia, so can I use one I can purchase here? I actually love liverwurst so it’s not new to me.
