Keto Pumpkin Chia Pudding
1 13.5 oz can coconut milk (order here), room temperature
1 15 oz box pumpkin (order here)
1 teaspoon stevia extract (order here)
1/2 cup chia seeds (order here)
1/2 cup water
1 teaspoon cinnamon (order here)
1/2 teaspoon nutmeg (order here)
1/4 teaspoon salt (order here)
whip cream for topping or coconut cream (optional)
Mix the pumpkin and coconut milk in a large bowl until smooth. Add the rest of the ingredients and stir until well combined. Pour the mixture into ramekins and let them sit in the refrigerator for about an hour. Top with whip cream or coconut cream if desired. Serve and enjoy.
