Paleo Peach Cobbler (Nut Free)

June 30, 2015 By Caitlin Weeks

I made this peach cobbler for some of our couple friends who were coming over. They were not Paleo but they gobbled up this yummy cobbler in no time. I used a few pears I had left over as well as peaches so you can really use any fruit you have sitting around. I topped it with organic heavy whipped cream which is what I had already but you can also make coconut whipped cream if you don’t eat dairy. I love to take this recipe for 4th of July BBQ’s and anytime you want a sweet treat without the gluten and refined ingredients in store bought desserts. This recipe will be good for people who may not want to cook with nuts or seeds because of an allergy or sensitivity. Even though coconut sounds like a nut it really isn’t on because it is considered a fruit.

Paleo Peach Cobbler (Nut Free)

Prep Time: 5 minutes

Cook Time: 30-40 minutes

Serves 6-8

Ingredients:

5 Peaches, peeled and sliced (pears will also work)

1/2 teaspoon baking soda

1/2 cup coconut flour

1/4 teaspoon salt

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 cup maple sugar or coconut sugar

3 eggs

3/4 cup coconut milk

Whipped coconut cream or organic heavy whipping cream, for topping

Directions:

Preheat the oven to 350 degrees. Place the peaches into a greased 8 x 8 glass baking dish. Mix dry ingredients in one bowl. Mix the wet ingredients in another bowl. Add the dry to the wet and mix thoroughly. Pour the mixture over the peaches and spread evenly. Place the cobbler into the oven and bake for 30-40 minutes until the top is golden brown. Let the cobbler cool for 5 minutes then serve onto plates and top with whipped cream, if desired.

For a lower carb version: substitute 1 teaspoon stevia extract instead of maple sugar and use 5 cups sliced strawberries instead of peaches.
