Mixed Berry Ice Cream (Dairy and Egg Free) –
Are you looking for a mixed berry ice cream (dairy & egg free)? I made this one for my family recently and they all loved it. It was so great becasue it only took a few minutes to make this creamy and refreshing dessert. This would even be suitable for an autoimmune Paleo approach becasue it does not have inflammatory ingredients.
Mixed Berry Ice Cream (Dairy and Egg Free)
Prep Time: 5 minute (freeze the ice cream machine canister 24-48 hours prior)
Cook Time: NA
Yields: 4 Cups Ice Cream
2 cans full fat coconut milk (like this one)
2 cups mixed berries (blueberries, strawberries. raspberries, blackberries)
1 tablespoon grass fed gelatin
1/4 cup honey OR 1 teaspoon stevia powder extract
Mix the coconut milk, berries, gelatin, and sweetener in the blender until smooth.
Place it in an ice cream machine and follow the manufactures directions. ( I have this one)
If you do not have an ice cream machine just put the mixture in the freezer and stir it every 30 minutes.
Serve the ice cream into bowl and eat.
