Paleo Shrimp Salad Recipe

This is a perfect recipe for a low carb diet or meal plan. I was born on the North Carolina coast so I feel like eating seafood is in my blood. I have many fond memories of eating shrimp as a child with my dad. I used these small shrimp usually called shrimp meat to make this salad. It is usually wild and available in most seafood departments at affordable prices. It is often sourced from Costco or my local Publix store sometimes I order from Vital Choice which is a sustainable seafood company with very high standards, here.

I used the new mayo from Primal Kitchen Foods which is made with avocado oil and organic eggs. Unlike most mayo that is made with rancid vegetable oils such as soybean or canola oil, where as avocado oil is cold pressed. These common cheaply made oils are heated at high heats so they oxidize during the processing. Paleo Shrimp Salad Recipe

Prep time: 10 minutes

Cook Time: NA

Serves: 4

Ingredients:

1 lb cooked shrimp meat

juice of 1 lemon

2 to 3 tablespoons mayonnaise

1/4 teaspoon paprika (optional)

1 bunch green onions, diced (use only green tips for low fodmap)

sea salt and pepper

Directions:

Rinse off the shrimp and pat it dry. Place the shrimp in a large bowl and add the rest of the ingredients and stir. Refrigerate until serving or eat immediately.
