Paleo Cauliflower Pizza Crust Recipe

best_cauliflower_pizza_crust_sqI have always wanted to make a cauliflower crust that was dairy free becasue many low carb recipes have cheese which can not be tolerated by Paleo people. The toppings you choose are up to you. I added an organic pastured/ grass fed cheese because I am eating cheese this week. My recipe was very yummy and fresh basil from my new plant that I got at the farmers market. I hope I can keep it alive in this hot summer weather. There is a great recipe that uses cheese in my friends wonderful diet book Eat Fat Lose Fat that inspired this dairy free crust variation.

Paleo Cauliflower Pizza Crust Recipe

Prep Time: 15 minutes

Cook time: 30 minutes

Prep Time: 15 minutes

Crust Ingredients:

1 large head cauliflower

2 eggs

1/4 cup ground golden flax

sea salt and pepper

 Toppings Ideas:

tomato paste

low sugar pizza sauce

sauteed mushroom

sauteed onions

sauteed peppers

beef pepperoni

ground beef

sausage crumbles

fresh chopped basil and parsley

Directions:

Grate the cauliflower in a food processor with the grater attachment or grate it by hand with a cheese grater. Place the grated cauliflower in steamer pot over a few inches of water and salt it generously. Turn it on high then steam it until aldente or slightly cooked but not mushy. Place the cooked cauliflower in a clean hand towel and squeeze out the water very well. Mix the eggs, flax, and a pinch of salt and pepper in a large bowl and let it gel for 5 minutes. Add the cauliflower and mix well. Line a cookie sheet with parchment then spoon out the pizza into two 8 inch pizzas about 1/3 inch thick. Bake the crust for 15 minutes on 350 degrees. Place the tomato paste or sauce on the crust thinly about 1-2 tbsp on each pizza. Top the sauce with cheese and desired toppings and bake for 10 more minutes still at 350 degrees. Turn the oven to broil and cook for 2-3 more minutes. Remove from the oven and top with fresh basil or parsley. Slice and enjoy.

Net carbs per serving: 3.5  (Includes, crust and 2 tbsp tomato paste, toppings will add additional carbs)
