Low Carb Chocolate Chip Cookie Bars Recipe

These low carb chocolate cookie bars are so delicious and ideal for those following low carb and ketogenic diet. Made with almond flour and low carb sweetener, these cookies really quench your cookie craving.

  1. Preheat oven to 350°F.
  2. Line the bottom of a 9″x13″ pan with parchment.
  3. In a medium bowl, mix together the almond flour, coconut oil and flax seeds until well combined.
  4. Evenly press the mixture into to bottom of the 9″x13″ pan.
  5. Bake the crust for 10-15 minutes until firm.
  6. Remove it from the oven and place the chopped nuts over the crust and spread the chocolate chips over the nuts.
  7. Add the coconut shreds over the top.
  8. Mix the sweetener into the coconut milk and pour the mixture evenly over the coconut shreds.

  9. Bake 35 to 40 minutes or until light brown on top and the centre is set.
  10. Cool on the counter for 20 minutes and then in the refrigerator for 40 minutes.
  11. Cut the bars into desired sized squares.
  12. Keep in the refrigerator for one week or individually wrap and freeze.

Recipe Notes

For a nut-free version: Use sunflower seed meal instead of almond flour and use toasted pumpkin seeds in place of walnuts.

For paleo version: Use 1/4 cup coconut sugar in place of the swerve.
