Ingredients

  • 4 eggs
  • 1 cup water
  • Pinch salt
  • 2 tablespoons ghee
  • or butter (melted)
  • vanilla extract (Optional)
  • sweetener for sweet version, (Optional)
  • 1/2 cup cream for creamier version, (Optional)

Instructions

Prepare the Eggs Mixture:

  1. Crack 4 eggs into a blender.
  2. Add a pinch of salt.

  3. If desired, add vanilla extract, or sweetener for a sweet version at this stage.
  4. Add 1 cup water and melted butter/ghee

  5. Note: for a creamier version, replace half cup of water with cream (1/2 cup cream + 1/2 cup water).

  6. Blend the mixture until smooth and well combined.
  7. Pour the egg mixture into a bowl that fits inside your Instant Pot.

Set Up the Instant Pot:

  1. Place the Instant Pot insert inside the Instant Pot to keep your bowl above the water

  2. Add about 2 cups of water to the Instant Pot, with insert inside.

  3. Place the bowl with the egg mixture on the insert trivet inside the Instant Pot. This prevents direct contact with the water.

Cook the Steamed Egg Pudding:

  1. Close the Instant Pot lid and ensure the steam release valve is set to the "Sealing" position.
  2. Set the Instant Pot to cook on high pressure for 4 minutes.

Release Pressure and Rest:

  1. Once the cooking cycle is complete, turn off the Instant Pot and manually release the pressure.

  2. Allow the pudding to sit for an additional 5 minutes to finish cooking as residual heat remains.

Serve and Enjoy:

  1. Open the Instant Pot lid and carefully remove the bowl of steamed egg pudding.
  2. The pudding can be enjoyed hot, or for a chilled option, refrigerate it for a while.
