  1. Preheat the oven to 350 degrees

  2. Mix the eggs, nut butter and vinegar in one bowl, then sift in the coconut flour and baking soda.

  3. Next, mix in the sweetener, vanilla, and salt

  4. Prepare a cookie sheet with parchment paper.

  5. When the mixture is well combined, spoon one-inch mounds onto a parchment paper, leaving a little space between each cookie. 

  6. Take a fork and press the down on the top of the dough to make an indention.

  7. Bake for 12-15 minutes until golden brown, remove from the oven. Let the cookies cool off, serve and enjoy. 

Recipe Notes

For a Paleo version: Use 1/2 cup coconut sugar in place of swerve.
