  1. Mix the eggs, vinegar and coconut milk in one bowl.
  2. Put the cocoa, creamer, coffee grounds, coconut flour baking soda and 1/2 cup sweetener in another bowl and mix well.

  3. Stir the egg mixture into the flour mixture and stir well to combine. When a batter forms add in the pecans and stir well.
  4. Grease the loaf pan with the coconut oil and pour in the batter.
  5. Bake 35 minutes or until a knife inserted in the center comes out clean. Remove the cake from the pan.
  6. Place the cake on a plate and dust with the remaining sweetener. Slice, serve and enjoy.

Recipe Notes

For a paleo version: Use half cup honey in place of sweeter for a paleo version. To make the coffee cake nut free use sunflower seeds instead of pecans. This recipe can also be made into muffins but cook for 5-10 minutes less.
