Ingredients

Instructions

  1. Make sure the bowl of your ice cream maker is very frozen for at least 48 hours before making this recipe.
  2. Prepare a large pot, such as a dutch oven, with hot water, about halfway full and place it over medium heat.
  3. Test the bowl you will use to make sure the water doesn’t touch the bottom of the bowl.
  4. Bring the water to a rolling boil.
  5. Using the glass or stainless steel bowl, add the eggs, cream, sweetener, vanilla and mix well with a whisk.
  6. Put the bowl over the pot and stir continuously, using the whisk.
  7. When it starts to thicken and look more like thin pudding, remove from the heat.
  8. You can strain the mixture if desired but not mandatory.
  9. Place the pudding mixture in the refrigerator and let it cool off for about an hour.
  10. Pour into your ice cream machine, add the CBD drops, if using, and chocolate chips, then follow manufactures instructions for churning.
  11. I use the Cuisinart model (order here) and I let it churn about 15-20 minutes until very thick, serve immediately and enjoy right away or transfer the ice cream to a glass container
    and freeze until serving.

  12. Mint chip variation: make it mint chip by adding a few drops of peppermint essential oil (order here) or the peppermint CBD tincture from Santa Cruz Medicinals order here.
