Keto Creamed Spinach Recipe

  1. Place a cast iron skillet (or oven safe skillet) over medium heat and melt half the butter.
  2. Add the onion to the pan and 1/2 teaspoon of salt.
  3. Sauté the onion until translucent and add the garlic and cook for 30 seconds, then remove the pan from the heat.
  4. In another large frying pan, add the rest of the butter, when the pan is hot add the spinach, and 1/2 teaspoon salt and sauté.
  5. When the spinach is thawed and warm transfer it to a strainer.
  6. Place the strainer over a towel or in the sink and squeeze out the water with hands or the back of a spoon.
  7. Put the spinach into the cast iron over medium heat and add the cream and cayenne until the cream starts to bubble.
  8. Add half the cheese and stir until well combined.
  9. Adjust salt to taste and remove from heat.
  10. Place the rest of the cheese over the top of the spinach mixture, evenly.
  11. Turn on the oven to broil and place the cast iron inside for 3-5 minutes until golden brown.
  12. Serve and enjoy.
