Instructions

  1. Preheat the oven to 350 degrees and prepare 2 cookie sheets with parchment paper.
  2. Place the dry ingredients in a bowl and mix.
  3. Place the coconut oil and eggs in another bowl and mix well.
  4. Pour the wet ingredients into the dry and mix until well combined.
  5. Place the extra cinnamon onto a plate and roll each cookie through the spice until coated.
  6. Place the cookie on the the prepared pan and press down into a circle shape.
  7. Repeat until all dough coated and pressed.
  8. Place in the oven and bake for 15 minutes or until done.
  9. Let the cookies cool on a baking rack for 10 minutes.
  10. Serve and enjoy.

Recipe Notes

For Paleo version: use 1/2 cup granulated maple sugar (order here ), in place of stevia, birch xylitol or swerve
