Instructions

  1. Preheat the oven to 350 degrees.
  2. Cover a cookie sheet with parchment.
  3. Mix the almond flour coconut sugar, salt, baking soda, cinnamon, ginger in a large bowl.
  4. Add the eggs and coconut oil and mix thoroughly.
  5. Place a few tablespoons of batter on the cookies sheet and use a fork to make and indention on top.
  6. Repeat until all the batter is used.
  7. Place them in the oven until for 10-12 minutes until golden brown.
  8. Let them cool for 10 minutes on a cooling rack.
  9. Serve and enjoy.

Recipe Notes

For a Paleo version: use 1/2 cup coconut sugar in place of the stevia powder extract
