This Keto Roasted Cauliflower and Bacon recipe is a delicious way to eat more cauliflower. It makes a great low carb and keto snack or side dish that is equally perfect for paleo, gluten, grain, dairy and egg free dieters!
Preheat the oven to 350 degrees.
Cover a baking sheet with parchment.
Cut the cauliflower into medium florets and discard the core. Place the florets on the baking sheet.
Cut the bacon cross-ways into 1 inch pieces and sprinkle them over the florets making sure the bacon is not stuck together.
Sprinkle the bacon and cauliflower with the salt and pepper.
Cook for 20 minutes then stir to coat the cauliflower in the bacon grease. Bake for 20 more minutes or until the bacon is crispy and the cauliflower is browned.
