Keto Peppermint Brownies
These awesome gluten free, Paleo peppermint brownies are a hit in my house. I hope you like them too. They have a cool refreshing flavor and will be hoarded by chocolate lovers. But they are guilt free because they are full of healthy fat and can be made low carb too!

Keto Peppermint Brownies
Ingredients
- 3/4 cup unsalted butter melted, plus extra for greasing the dish
- or ghee
- or coconut oil
- 1 teaspoon vanilla extract gluten-free
- 3 large eggs beaten
- 2 teaspoons stevia extract powder
- 1 teaspoon lemon juice
- 2 cups blanched almond flour
- 1 cup canned pumpkin
Instructions

Preheat the oven to 350°F and grease an 8-by-8-inch glass or ceramic baking dish.

In a medium bowl, whisk together the melted fat, vanilla, eggs, honey, and lemon juice until well combined.

Mix the almond flour, cocoa, and baking soda in a small bowl.

Add the dry mixture to the wet and stir until well combined.

Stir in the peppermint extract and pour the mixture into the prepared baking dish.

Bake for 35 minutes, or until a knife inserted in the center comes out clean.

Remove from the oven and cool in the baking dish for 30 minutes.

Cut into squares, serve, and enjoy.
Recipe Notes
For Paleo Version: Omit pumpkin and use 1 cup honey instead of stevia extract powder.
