Besides its unique flavor, it has A2 milk properties, a unique quality that makes goat cheese a remarkable choice.
A2 milk is known for its enhanced digestibility, and presents a promising alternative for individuals with lactose intolerance, digestive sensitivities, or even have IBS concerns. It has lower levels of lactose and casein which makes it a more easily digestible alternative for regular milk, especially for people who may experience discomfort from consuming A1 beta-casein. Therefore, goat cheese offers potential benefits for those with digestive sensitivities.
Cow dairy causes inflammation, slows down digestion and weight loss, especially when you have Hashimotos. So, if you have lactose intolerance or mild dairy sensitivity, goat cheese is a good alternative. I have a cow dairy sensitivity but I seem to do much better with goat cheese. For me, goat cheese is less inflammatory.

While goat cheese adds a unique creaminess, you can explore variations by using cream cheese instead, as an alternative. This tweak offers a different yet equally delightful texture that complements the meat perfectly. You can add a touch of broth if you want, to contribute to overall taste and keep your meatloaf from drying out.
You can add sugar free ketchup for adding a nice touch but it is optional. I use this sugar-free ketchup that I got from Primal kitchen and that is something I cannot eat it without. So, a little bit of ketchup is a good option if you are a kind of pro-ketchup.
Seasoning and spices add a delightful dimension that enhances the overall experience and holds the power to transform a simple dish. I use garlic powder and Italian seasoning in my recipe. While Italian seasoning and garlic powder enhance the flavor, you can feel free to adjust the spices to your preference. If you’re just starting out on a carnivore diet and don’t really want to do spices or just prefer a simpler taste, these ingredients are optional. Some people need to do an elimination of spices at first when they start a carnivore diet and then later, when they become comfortable and feel like they can tolerate spices, can try adding them back to their diet again.
What if You Are Cooking Meatloaf with just 1 lb Ground Beef:
For those opting to whip up a meatloaf recipe using just 1 lb. of ground beef, I have got you covered. When working with this quantity, keep in mind that the cooking time may vary slightly from the standard instructions. As a general guideline, set your oven to 350°F and anticipate a cooking time of around 30 minutes for a 1 lb meatloaf. And for the quantity of ingredients, you will need four ounces of goat cheese, two eggs, one teaspoon of Italian seasoning, one teaspoon of garlic powder and one teaspoon of salt. These are the ingredients for the meatloaf recipe with one pound ground beef, and if you do use two pounds just double everything that’s what I did.
How Do You Know When Meatloaf is Done Cooking: When’s the Right Time?
Keep in mind that cooking times can vary based on your oven’s temperature accuracy and the size of your meatloaf. As your meatloaf nears completion, observe the edges. A well-cooked meatloaf will gently pull away from the sides of the pan, signaling that it’s reaching the desired doneness.
Additionally, you can take a small bite from the center of the meatloaf. Ensure that the meat is cooked through and doesn’t appear overly pink. This method offers a reliable way to gauge the internal doneness without relying solely on visuals.
Another, easiest and reliable way to know if meatloaf is cooked just right is to use a food thermometer. When the inside temperature reaches 160 degrees Fahrenheit (about 71 degrees Celsius), your meatloaf is fully cooked and good to go!
